Egg Muffins
If you’re always in a rush like I am but still want a hearty
breakfast, then read on. Egg muffins are easy to make and easy to customize to
your liking. I made mine with chopped up bell peppers, onions, cheese and diced
ham but you can make it with which ever ingredient you’d like. The egg muffins
can be refrigerated or frozen to enjoy on another morning. Below is the recipe.
What you’ll need:
9 whole eggs
1 diced red bell pepper
1 diced green bell pepper
1 diced yellow onion
2 cups of diced ham
2 cups of your favorite shredded cheese
A whisk
A 12-cup muffin pan
What to do:
Preheat your oven to 350º
In a large mixing bowl crack the eggs and whisk them
together
Add in peppers, onions, ham and cheese and keep on whisking
until all ingredients are blended together
Spray your muffin pan with non-stick spray
Pour the contents of the mixing bowl in the muffin pan
Place in the oven for 20-25 minutes
Once the egg muffins are out of the oven set them down to
cool for about 10 minutes
